In 2013, when I was providing a gourmet meal service to families in the Boulder area, one of my clients asked me to bake cookies for her son, who required a grain free diet. So I used my culinary training to create a new, almond flour based cookie that he could eat and that would not sacrifice flavor. Others began clamoring for my cookies, and so I founded Boulder Cookie and began production in 2014. As a mother of four, a professional chef and a lover of food, I am proud to now be able to nourish you and your family with my Boulder cookies and with my Boulder Bake dry mixes. All are made with simple, wholesome ingredients, free of gluten, grain and processed, high glycemic sugars, the leading cause of inflammation. Almond Flour, Chocolate Chips, (evaporated Cane Juice, Chocolate Liquor, Non-dairy Cocoa Butter) Tapioca, Arrowroot, Baking Soda, Sea Salt.
Directions
Just use swerve for sweetener and add 1/4 cup water.
You will need: 1/4 cup grapeseed oil, butter, coconut oil, or oil of your choice. 1 tbsp vanilla extract. 1/4 cup honey, maple syrup or agave nectar. Preheat oven to 325 degrees F. Empty entire bag of mix into bowl with oil, vanilla and sweetener. Scoop out 12 cookies and bake on parchment paper (slightly flatten cookies before baking) and bake for 12-13 minutes. Enjoy!
