You Will Need: 2 large eggs; 1 cup milk; 1 cup XO Baking Co. Pancake & Waffle Mix; 2 tablespoons veg. oil or unsalted butter, melted. Milk can be replaced with any non-dairy alternative. Yield: About 8 - 10 four-inch pancakes. 1. In a large bowl, using a wire whisk or electric mixer, blend all ingredients together, until smooth. If desired, stir in toppings like chocolate chips, bananas, blueberries or nuts. 2. Heat a lightly oiled griddle or frying pan over medium-low heat. Pour approx. 1/4 cup batter for each pancake, and flip when tiny bubbles form on top. Cook until bottom of pancakes are golden brown. Helpful Tip: To measure pancake mix properly, spoon mix into measuring cup so it overflows, and level off with knife. To make Crepe batter, add 3/4 cup water to ready-made pancake batter, and mix thoroughly. XO Baking Co.'s Wonderful Waffles: Yield: about 4, 7-inch waffles. 1 cup XO Baking Co. Pancake & Waffle Mix; 1/4 cup warm milk; 1 teaspoon active dry yeast; 3/4 cup milk, divided; 2 large eggs, separated; 3 tablespoons unsalted butter, melted; 1 teaspoon vanilla extract. In a small bowl, whisk the yeast in 1/4 cup warm milk until dissolved. Set aside. With an electric mixer, beat egg whites until they become white and soft peaks begin to form. Set this aside as well. In another large mixing bowl, whisk together the waffle mix, yeast mixture, 3/4 cup milk, egg yolks, melted butter and vanilla. Gently fold in beaten egg whites until combined. Let batter sit for 15 minutes. Pour batter onto preheated and greased waffle iron and cook according to manufacturer’s instructions.
