Directions
Green, white and red: Italian style Aperitif - Vegetarian. Our version of an easy aperitif with 3 different sauces to pair with our breadsticks with truffle 200 g young green peas - 200 g chickpeas -100 g robiola or fresh cheese - 2 tablespoons of paprika marjoram, spring onion, olive oil, salt and freshly ground pepper Instruction for the green sauce: Separate the young green peas from the pod and boil them for a few minutes, drain them, and let them cool in a bowl with water and ice to maintain the green color. In a mixer, add the drained peas with the desired quantity of spring onion finely chopped. Blend the ingredients with olive oil until a firm texture, then add salt and freshly ground pepper. Instructions for the white sauce with marjoram: In a small bowl, mash with a fork the robiola (or the fresh cheese) and mix it gently with marjoram leaves. Season with salt and pepper. Keep aside some leaves to use as decoration. For the red sauce with chickpeas and paprika: In a mixer, blend the chickpeas adding 2 tablespoons of paprika, a small glass of warm water and some olive oil. Once attained the desired texture, season with salt and pepper. Tips: You can serve the 3 sauces in 3 small colored bowls and decorate each of them with sprouts and leaves. In the white sauce, in order to add a more intense and full taste, you can add an anchovy thinly chopped. In the red sauce, you can replace a tablespoon of paprika with one of dehydrated tomato powder.
Serving Suggestions: An authentic and crunchy Italian specialty. Delicious when served with all classic Italian dishes, excellent with cheeses, meats, salami and soups. Ideal for tasty aperitifs especially with red wines.
